Rösti from the Canton of Uri

Ingredients

Boiled potatoes
1 1/4
kg
Uri or other mountain cheese

dl
melted bulter
800
g
Onions

weak black coffee
 
Procedure
 
1. Skin and grate boiled potatoes. Chop onions very finely and fry in melted butter until transparent but not brown.
2. Add grated potatoes, sprinkle with salt, increase heat and fry until nicely brown.
3. Just before Rösti is ready, add finely sliced cheese. As the cheese melts, pour coffee over it, as this makes the Rösti moist and gives it a good colour.
4. Form Rösti into a cake, fry till crisp, turn onto Rösti plate and serve immediately.
