Procedure
 
1. Skin the boiled potatoes and grate them. Chop onion very finely, slice mushrooms or chanterelles.
2. Cut ham into strips. Melt fat in frying pan and fry onion, mushrooms and ham lightly.
3. Add grated potatoes, season and fry the whole to a crisp Rösti by turning several times.
4. Turn the Rösti onto a plate and serve it with fried eggs.
