Stock Beef Brown

Procedure
 
1.
2. -Season meat with salt and pepper
3. -Toast to a brown color
4. -Cut vegetables into smaller chunks and add to meat
5. -Sweat for a few minutes and add tomato paste
6. -Dust with flour and mix well
7. -Deglace with white wine and reduce
8. -Add beef stock and simmer till meat is cooked, but still firm
9. -Seperate meat from vegetables
10. -Strain sauce and adjust thickness and seasoning
11. -Top meat with sauce
