Lamb Souvalaki in Pitta

Tomato, medium, firm

Yoghurt, natural

Tahini sauce
 
Procedure
 
1. 1. Make a marinade of the olive oil, cumin and garlic.
2. 2. Add trimmed lamb fillets and marinate for at least one hour.
3. 3. Mix together yoghurt, tahini, lemon juice and seasoning to taste.
4. 4. Peel and concasse tomato. To assemble - wipe lamb of excess marinade and char grill.
5. 5. Warm through pitta bread and spread with yoghurt mix and sprinkle tomato down the centre. 6. Add grilled lamb. Season. Roll up and serve immediately.
