Fine veal liver with Rösti

veal liver, finely cut

Onions

g
Parsley

dl
oil

pc
Lemon

Salt

x
freshly ground pepper

portions of herb butter
 
Procedure
 
1. Heat oil in frying pan and cook very finely chopped onion and parsley.
2. Add liver and fry quickly on all sides until done.
3. Season with lemon juice, add pepper and salt. Add the herb butter to melt.
4. Serve immediately with a golden Rösti.
