Asparagus White Cooked

Veal Loin Trimmed

Sauce Porcini Tomato

Potato New
 
Procedure
 
1. -Heat asparagus in asparagus stock
2. -Season veal and pan fry till medium well
3. -Blanch new potatoes and pan fry till golden brown
4. -Heat porcini mushroom sauce and adjust seasoning
5. -Remove asparagus from stock and let trip dry
6. -Place on plate
7. -Place veal nest to it and pour sauce over veal
8. -Arrange roasted potatoes
